Watermelon Granita

When the Texas heat is in full swing, sometimes all you need is something cold and refreshing. Light and easy to customize, Watermelon Granita is the perfect treat for a hot Houston day. It takes inspiration from traditional Sicilian granita, a semi-frozen dessert known for its signature crystalline texture, while incorporating flavors reminiscent of the Mexican raspado, or raspa.

What You'll Need

For the Granita

  • 2 cups (500g) fresh watermelon juice
  • 1 cup (250g) simple syrup
  • 1 sprig of mint
  • Juice of 1 lime
  • Zest of 1/2 lime

  • Pineapple

Start with the Simple Syrup

The simple syrup provides the sweetness that balances the watermelon and lime while helping create the granita’s smooth, delicate texture.

In a small saucepan, combine 1 cup of sugar with 1 cup of water. Heat over medium-low, stirring until the sugar has completely dissolved and the mixture reaches a gentle simmer. Remove from the stove and allow it to cool.

Need to speed things up? Place the bowl of syrup over an ice bath to cool it more quickly. You’ll have extra syrup left over, which can be refrigerated and used in other recipes or drinks.

Build the Watermelon Base

While the syrup cools, blend fresh watermelon with the mint until smooth. Pour the mixture through a cheesecloth or fine-mesh strainer to remove the pulp and create a vibrant watermelon juice.

In a bowl, combine 2 cups of watermelon juice with 1 cup of cooled simple syrup. Add the fresh lime juice and lime zest, stirring until everything is well incorporated.

This combination is where the granita really comes together. The watermelon brings natural sweetness, the lime adds a little acidity, and the mint provides a refreshing finish.

Create the Granita Texture

Pour the mixture into a shallow glass or metal baking dish and place it in the freezer.

After about 45 minutes, ice crystals will begin to form around the edges. Using a fork, gently scrape the crystals toward the center and stir them into the remaining liquid. Return the dish to the freezer and repeat this process every 30 to 45 minutes for the next 2 to 3 hours.

While it takes a little patience, this step is what gives granita its signature light, flaky texture. Each round of scraping breaks up the ice crystals, creating the delicate consistency that makes this dessert refreshing.

Make It Your Own

Once the mixture is completely frozen into delicate flakes, spoon the granita into a chilled bowl and get creative with the toppings.
